Unfortunatley, there is no very detailed guide availabe but we can help you with every aspect and detail. I would recommend you to start from demo content and continue editing it or install demo content in another directory because that would allow you to see how each element and functionality is built/used.
Regarding Products with Filter page you need to use Filterable shortcode combined with Product shortcode. All options you'll have in their respective settings.
As I stated we CANNOT edit demo content directly due to current server size restrictions* and are basically guessing at how to pull pages together with the elements that we mix and match as best as we can.

Please provide list of elements (in order ) & sample short codes required from demo for this section. We used a Post Grid which is probably wrong. We are literally grabbing stuff and trying to figure out what each does but don't know how they relate to each other.
If we purchased WPBakery directly rather than your theme, we would have access to their templates and would be in a much better starting place.
