The demo you imported does not use WooCommerce to add and manage products. The products are created as pages and the order form is filled manually with the products.
In case you do not like this way of adding products you can then install WooCommerce along with YITH WooCommerce Catalog Mode.

The best way to go in your situation is YITH WooCommerce Catalog Mode plugin. It will allow you to basically set a shop without ecommerce part. Once you are ready to lunch cart and checkout you will need to simply disable it.
Unfortunately, switching from one demo to another is not possible. The only alternative is to install the other demo on a new directory and then manually migrate the current pages.

Yes, that is one way of importing the current pages to the new demo content. Make sure to copy and save the content from Text View of Classic Mode and then once you install the new demo version create new pages with those saved content.
