I'd like to modify the menu adding the categories I have created but i cannot see them in the choices. I have also tried to create a new menu from the scratch instead to modify it but same situation.
Seems you are looking at Categories instead of Product Categories. If you do not see product categories then make sure to check Product Categories from Appearance > Menus > Screen Options. See https://d.pr/i/z4U0ac.

Modify menu, Add a new menu, create a new category and then create a new menu, but I cannot see the categories I ahev created.
I see only the categories of the demo i have imported.
